It’s here! The last week of school! Summertime Melissa will be returning soon much to Andrew’s delight. (Work Melissa, on the other hand, takes a little offense to this. She is just as fun as Summertime Melissa…kind of…in different ways of course…)
It’s hard to believe another school year is over. I have been reflecting on how far my class has come, how much we have grown as a little family in room 4 and how I will really miss them. (even though I don’t always feel that way in the moment)
On Friday we had our last spelling test of the year (I told you, I’m kind of mean…we have a math test on Monday too) and as I was marking them, I came across this.
In Mrs. Skinner’s Grade 3 class we don’t write in pen…we can’t erase pen and we are most certainly going to make mistakes (because we are learning) so we don’t want to write with something that is so permanent. Now why this little girl decided to only write one word in pen I don’t know, but it sure made me smile when I read her little apology note. And what was better….her reaction to my note when I handed back the papers.
“Mrs. Skinner, you wrote ‘No problem!’ next to my note!”
Here is what I have planned for the last week of school!

- 1 can of beer
- BBQ sauce
- Ground beef
- Taco kit
- Taco veggies (lettuce, red pepper x 2, green onion)
- Chicken thighs
- Lemon pepper
- Plain Greek yogurt
- Frozen fries
- 2 cans chickpeas
- bread crumbs
- garlic powder
- onion powder
- poultry seasoning
We love tacos! I would always make my own seasoning and buy everything separate, but you can’t go wrong when (almost) everything you need comes in one neat little box.
I have a pork tenderloin in the freezer, and I know I said that I would try that pork Wellington again, but I lied…it was too much work. Pulled pork sandwiches, on the other hand, are not. I’ll have to find another way to use up that puff pastry.
I’m always on the hunt for a good slow cooker recipe. You can serve this in pitas, but I think (since we are trying to eat gluten free) we are going to eat this as a salad instead.
I am especially excited about this recipe. They look so incredible and they are completely vegetarian….plus it gives me a chance to make fries!
I don’t care what we eat tonight…I made it and that will be all that matters.
