Weekly Meal Plan February 17-21

Happy Family Day weekend! I hope that, if you get this holiday, you are using it to spend time with and reconnect to your family. I love long weekends…who doesn’t like extra time to rest and relax? It’s also one more day to put off the school work that sits in my bag…

Here is what I have planned for this week.

Who knows? It’s a holiday! We will cross that bridge when we get there Crockpot Thai Chicken and rice Baked potato soup Thai Turkey Meatloaf, Rice and Stir Fry Veggies Potluck at a friend’s house. I’m making meatballs!

Grocery List

  • 4 chicken breasts or the equivalent in chicken thighs if you prefer
  • 1 red pepper
  • 1 onion
  • creamy peanut butter
  • lime
  • vegetable broth
  • soy sauce
  • cumin
  • rice
  • green onions
  • crushed peanuts
  • cilantro
  • 2 russet potatoes
  • 1 head of cauliflower
  • chicken broth
  • milk
  • sour cream
  • cheddar cheese
  • bacon
  • 2 lbs ground turkey
  • garlic
  • ginger
  • soy sauce
  • toasted sesame oil
  • eggs
  • brown sugar
  • ketchup
  • sriracha
  • rice vinegar
  • stir fry veggies x 2


I guess you might say that I am on a bit of a Thai flavor kick this week…I don’t usually do that, but these recipes just looked too good to pass up! I think I will serve mine with some stir fry veggies just to round out the meal. Skinny Crockpot Thai Peanut Chicken from Rachel Schultz


Skinnytaste is a GREAT blog for healthy and super delicious recipes. I haven’t tried one in a while, but this one as been tempting me the last few weeks…so why not give it a try right?


Budget Bytes is another one of my favorite food blogs (thanks Colin for introducing me!) This looks so yummy and I cannot wait to try it! Again, I am going to add some stir fry veggies on the side to round out the meal.
