Weekly Meal Plan December 9-13

I cannot believe it is only 2 weeks till Christmas break!

At school…this is when things start to get really crazy (if they weren’t wacky enough already). Indoor recess becomes a regular (we had it all last week) and kids start to get wound up with excitement. Routines go out the window with concert practices and wrap up activities and by the last Friday everyone is ready for the break.

I’m looking forward to trying more new recipes over the break, but until Christmas, I am going to be sticking to old favorites and things I have in the freezer to get us through.

Here is what I am making next week:

Pasta Fagioli Soup

Lentil Meatball Subs

Chicken “Alfredo” Bake

Frozen Pizza

Christmas Party with Friends – Eat as little as possible for supper

 

Grocery List:

  • Pasta Fagioli soup from the freezer (you can use my recipe to make your own)
  • Salad stuff
  • Dry lentils
  • Minced garlic
  • Onion
  • Eggs
  • Bread crumbs
  • Flour
  • Soy sauce
  • Tomato paste
  • Fennel seeds
  • Red pepper flakes
  • Oregano
  • Thyme
  • Pasta sauce
  • Mozzarella cheese
  • Sub buns
  • Pasta
  • Alfredo sauce (or you can make up my cauliflower Alfredo sauce)
  • Chicken breasts
  • Parmesan cheese
  • Frozen pizza

Monday

I want to do the last little bit of my Christmas shopping on Monday after school, so I want a meal that I can just warm up when I get home. Good thing I have tons of soup in the freezer! Every time I make a batch of soup, I freeze half for another day. It makes life really, really easy on days like this.

Tuesday

I’m on a bit of lentil kick (much to my husband’s dismay). They are so filling and kind of have the texture of meat. These “meatballs” looked so good, and I figure if I smother them in pasta sauce and cheese they will be amazing!

Wednesday

More stuff from my freezer! I am using up the last of my cauliflower Alfredo sauce to make a chicken pasta bake.
