Weekly Meal Plan July 13-17

One part of an all inclusive holiday that Andrew has never been a fan of is the nightly shows. Now I don’t mind them (other than they are very late at night…9pm…and bordering on my bedtime) but Andrew really can’t handle them.

See there was the “Cats” incident of 2008 which I think really kicked off his whole hate for the all inclusive show.  We were sitting in the auditorium waiting for the show to start. The entertainment team was going to be doing a rendition of “Cats”, the famous Broadway musical.  The lights dimmed and the show seemed to be starting. All of the sudden out of nowhere a man dressed as a cat popped up beside Andrew (in an aisle seat) and scared the life out of him…Andrew recoiled, yelled and almost hit the guy in the face. Needless to say, Andrew wasn’t all that excited about seeing anymore shows…

So we didn’t go to many on our last holiday…in fact we only went to one because we were waiting for the fireworks to start on July 4th, which were after the show. It was a big beach party with dancing and music done by a live band. It sounds fun but what we laughed about after was that it was more like Jimmy Fallon’s version of nonesense karaoke…

See when English is NOT your first language it’s sometimes hard to get the words right. We had a good giggle about this as we watched.

We didn’t partake in the nightly entertainment on our week away, but what we did partake in a lot was the food…A LOT. It’s hard not to when it is right there, accessible, someone else made it and its free. Let’s not talk about how much ice cream I ate last week…

So for our meal plan this week we are locking it down. It’s a detox week of sorts. Trying to rid our bodies of all the burgers, fries, ice cream and various other treats we ate.

Here is what we are eating this week:

I have been making this recipe for a while now, but I finally own the cookbook it came out of! Thanks, Sarah for the gift…I am looking forward to cooking lots out of it and having you over to try it!

Chickpea Salad Sandwiches


Even though I just made split pea soup the week before we left, Andrew said he would like it again. I am not going to complain! It is so easy and it goes in the crockpot so I don’t have to turn the oven on during this heatwave we are having…


This is one of my all time favorite recipes...and Andrew loves it too. In fact I suggested a different chickpea recipe and he requested this instead.
