Weekly Meal Plan December 16-20

This is the last official meal plan of the year. Christmas break is so crazy, and I never really know when we will be home, so we kind of fly by the seat of our pants a little more. I may even go to the grocery store without (GASP!) a list…

Ok let’s not get crazy, I will make a list. I always make lists.

Now I know the season of Turkey dinners is just around the corner, and we will have our fair share of them, but I have never cooked my own Turkey before. So there are a couple of Turkey recipes on the menu this week so I can finally say I have cooked (part of) a turkey in my home.

Here is what is on the menu this week:

Monday

Turkey, stuffing muffins and mashed potatoes

Turkey Noodle Soup

Spaghetti and lentil meatballs

Frozen pizza

BBQ chicken sandwiches and salad

Grocery List:

  • 1 turkey breast (the recipes says to use a boneless one, but I bought a bone-in one…flavor right?)
  • Apple
  • Butter
  • Salt
  • Rosemary
  • Thyme
  • Sage
  • Onion powder
  • 1 loaf soft white or brown bread
  • Apple butter (I have yet to find this…do you know where I can get it? Or where I would look for it?….I may just try honey)
  • Celery
  • Onions
  • Corn flakes
  • Dried cranberries
  • Potatoes or instant mashed potatoes
  • 2 containers of turkey or chicken stock
  • Garlic
  • Carrots
  • Bay leaf
  • Italian seasoning
  • Egg noodles
  • Spaghetti noodles
  • Lentils
  • Eggs
  • Bread crumbs
  • Flour
  • Soy sauce
  • Tomato paste
  • Fennel seeds
  • Red pepper flakes

Alright, I hope that this turkey recipe is good. I am excited to be able to throw it all in my slow cooker and finish off the meal with stuffing muffins and potatoes when I get home. If this works out well, we may have Turkey dinner more often!

Naturally, you make soup with leftover turkey right? Hopefully there will be enough to freeze for over the Christmas break.

I am sure Andrew was hoping I would forget about this lentil meatball recipe…but I haven’t! Instead of meatball subs like I had planned last week, I think I will try them as toppers to spaghetti. And if I make some cheesy garlic bread to go along with it, maybe Andrew won’t hate it too much.

Thursday

We have our staff Christmas lunch on Thursday so I think I am going to be pretty full by the time supper rolls around. I’ll be making Andrew a frozen pizza that night.

Friday

Friday is grocery night, so I think I will pick up a pre-cooked chicken, some nice bread and salad fixings and that should get us through the weekend.

Weekly Meal Plan December 9-13

I cannot believe it is only 2 weeks till Christmas break!

At school…this is when things start to get really crazy (if they weren’t wacky enough already). Indoor recess becomes a regular (we had it all last week) and kids start to get wound up with excitement. Routines go out the window with concert practices and wrap up activities and by the last Friday everyone is ready for the break.

I’m looking forward to trying more new recipes over the break, but until Christmas, I am going to be sticking to old favorites and things I have in the freezer to get us through.

Monday

I want to do the last little bit of my Christmas shopping on Monday after school, so I want a meal that I can just warm up when I get home. Good thing I have tons of soup in the freezer! Every time I make a batch of soup, I freeze half for another day. It makes life really, really easy on days like this.

Tuesday

I’m on a bit of lentil kick (much to my husband’s dismay). They are so filling and kind of have the texture of meat. These “meatballs” looked so good, and I figure if I smother them in pasta sauce and cheese they will be amazing!

Wednesday

More stuff from my freezer! I am using up the last of my cauliflower Alfredo sauce to make a chicken pasta bake.
