Weekly Meal Plan May 5-9

As a teacher, there is a shift that starts in May.

We move from “Teach them that” and start to check “Have they retained ANY of what I taught them?”

It can sometimes be a discouraging time of year.

But it is also funny and cute at the same time.

Last week we did a district writing assessment. The students were asked to pick a special object and write a descriptive report on it explaining what it looked like, where it came from and why it was so special.

One of my little girl’s chose to write about me. There was no dissuading her, I was her special object…and once kids get something in their head it is VERY hard to change their trajectory.


Clearly I have not taught her enough about punctuation and the ever useful skill of editing and reading over one’s work to make sure it is clear…sigh! At least she loves me and thinks I’m the best right?

We have more of these assessments on the horizon, and I hope to ingrain a few more key concepts into these 8 year olds before then. Wish me luck!

Pork tenderloin was on sale last week at the grocery store, so I bought a couple and froze them for this weeks meals. We love pulled pork, but if you are a regular reader of this blog, you know that we are more excited about Tuesday’s supper…



Pulled pork pizza rolls! These always follow pulled pork sandwiches and they make us oh so happy!



Our meatless dish this week is a slow cooker tomato soup. And you cannot eat tomato soup without a grilled cheese sandwich…



This salad looked incredible when I saw it on Pinterest. It seems really fresh and Spring-like. Maybe we can even eat it out on the deck and use the BBQ to cook the chicken…


Weekly Meal Plan March 3-7

It is minus a million outside here…ok, not minus a million, but it is -30 and it makes me not want to go anywhere.

Not go anywhere and cook/bake…

But I am going to try to curb the feeling because I do not want to EAT all the great things I would make.

Cold weather means not a lot of exercising and a whole lot of TV watching.

So instead I will get my meal plan together and just think about all the good things I can make and eat this week. Hopefully that will fill the void.

I am making a meal for friends tonight, so what better thing than a HUGE pot of soup and some cornbread to go along with it?



Let’s be serious, I make this meal so that I can make tomorrow’s meal…pulled pork pizza rolls are delicious. A pulled pork sandwich, though, is a good means to an end right?
