Weekly Meal Plan March 3-7

It is minus a million outside here…ok, not minus a million, but it is -30 and it makes me not want to go anywhere.

Not go anywhere and cook/bake…

But I am going to try to curb the feeling because I do not want to EAT all the great things I would make.

Cold weather means not a lot of exercising and a whole lot of TV watching.

So instead I will get my meal plan together and just think about all the good things I can make and eat this week. Hopefully that will fill the void.

I am making a meal for friends tonight, so what better thing than a HUGE pot of soup and some cornbread to go along with it?



Let’s be serious, I make this meal so that I can make tomorrow’s meal…pulled pork pizza rolls are delicious. A pulled pork sandwich, though, is a good means to an end right?



One of my all time favorite meals…truly. Pulled pork pizza rolls. If you have not tried these, what are you waiting for?



I love a good meatball…so why not find more ways to make them? Mexican flavors are also one of my favorite so I hope that this is as good as it looks!


Weekly Meal Plan January 6-10

I can’t believe the Christmas break is almost over. It feels like I just left school, looking ahead to a long relaxing break…and now there are just a few days left.

That means it’s time to start thinking about next week…and more importantly what will we eat next week. (The marking that has my school bag loaded down can wait till Sunday right?)

Here is what I have planned for this week:






Chicken Alfredo Pasta

Soup from my freezer

Pulled Pork Pizza Rolls

Lentil Meatballs and Pasta

Frozen Pizza


Grocery List-

  • Chicken breasts or precooked chicken (I have some cooked chicken in my freezer I am going to use up)
  • Your favorite Alfredo sauce or a batch of my cauliflower Alfredo sauce
  • Mozzarella cheese
  • Rotini or other tube shaped pasta
  • Yeast
  • Flour
  • Sugar
  • Salt
  • BBQ sauce
  • Pulled pork
  • Your favorite red pasta sauce
  • Spaghetti noodles
  • Dry lentils
  • Minced garlic
  • Onion
  • Eggs
  • Bread crumbs
  • Soy sauce
  • Tomato paste
  • Fennel seeds
  • Red pepper flakes
  • Oregano
  • Thyme
  • Frozen pizza (if you don’t already have one…)



I know I say this often and never get around to it, but I am seriously going to pull the last bit of that cauliflower Alfredo sauce out of the freezer and use it up with the chicken that I have frozen as well. I’ll mix it together with some pasta, cover it in cheese and bake it till it is golden and bubbly.



I am pulling out a container of one of the many soups I have hiding in my freezer. Borscht, Turkey noodle, chicken noodle or pasta fagioli…not sure which it will be yet, but all are a good choice on a cold day.



We had a family get together over the Christmas break and I was charged with making the pulled pork for the gathering. There was lots left over…more than Andrew and I could eat, so I froze it. I made pulled pork nachos with some of it (which were absolutely delicious by the way!) and I thought pulled pork pizza rolls would be good too. I’ll use BBQ sauce as my base and load it up with cheese, caramelized onions and pulled pork. Yum!


This is still one that I want to try…it didn’t happen before Christmas, but it is definitely going to happen next week. Lentils are one of my new found favorite things, so I am sure that this will be delicious and filling and fiber filled…which we all need after the junk we ate for 2 weeks straight.
