Summertime Melissa is not as organized as Work-time Melissa…
Being on holidays has thrown my usually rigid schedule right out the window. This then affects the meal plan and any sort of subsequent blogging I may do. Oh well, I’ve read a bunch of books already this summer and am trying to revive our sad looking lawn…does that count as productive?
Today I actually made myself a list of all the things I need to get done. It is daunting, but there is something about a list that I cannot ignore. So I am begrudgingly putting down the book I am reading and starting to cross things off my list.
The first was to make a meal plan for the week, which we desperately need. As Andrew left for work this morning he told me there was no almond milk left (he used the last of it in his smoothie this morning).
No problem I thought…I can just have cereal for breakfast…
nope, the milk was chunky…
That would have never happened on Work-time Melissa’s watch.
Sigh, oh well, I guess I have to have toast for breakfast. Luckily Summertime Melissa is pretty laid back about these things.
It has been incredibly hot here the last week and there seems to be no end in sight. I am trying to find recipes that limit the amount of time the stove actually has to be on. I think I have succeeded.

- 4 baking potatoes
- Baked potato toppings
- Soy sauce
- Rice wine vinegar
- Chicken breast
- Green onion
- Unsweetened coconut
- Small green/red chili
- Naan bread
- Pork chops
- Your choice of veggies that you like grilled on the BBQ
- Raw almonds
- 1 head of broccoli
- Minced Garlic
- Pasta sauce
- Shredded Parmesan cheese
Last night, for supper we bought a roasted chicken from Superstore to make sandwiches. With the leftover chicken, I plan to make BBQ chicken loaded baked potatoes. By throwing the potatoes in the slow cooker, I should be able to keep the house relatively cool today.
This salad was SO good the last time I made it. Plus, with being on holidays, I have lots of time to prepare it in the afternoon and let the flavors blend together before Andrew gets home.
This meatless meal may not be a huge hit with my husband…but it looks so interesting to me that I just have to give it a try. I’m going to serve these like meatballs on top of pasta. I hope they taste good…
I’m going to marinade some pork chops and some veggies and throw them on the BBQ. (Actually Andrew will throw them on the BBQ…I never BBQ) I may even make a salad to go along with it.
