Weekly Meal Plan February 1-5

A little boy in my class came running up to me first thing yesterday morning with a big smile on his face.

“Mrs. Skinner, do you and Mr. Skinner like Starbucks?”

“Yes we do, why?” I asked curiously.

Beaming he handed me this:

“It’s a free coffee Mrs. Skinner, you and Mr. Skinner can each have one.”

“Oh thank you so much” I gushed.

I couldn’t break it to him that it wasn’t really a free coffee…he was so proud and excited to give it me.

Sometimes kids are so sweet…

As I was looking at recipes this week and putting together our meal plan, I saw a distinctly Asian flare to my choices…I hope you like it too!

We haven’t had lettuce wraps in a while, and I was completely prepared to change the recipe if the price of lettuce had skyrocketed (like all the other produce out there). Luckily, iceberg lettuce was still reasonably priced at $1.98!

Tuesday

Our meatless meal this week is an old favorite…chickpea salad sandwiches. I will most likely serve this with some cut up veggies or maybe even a salad.

Wednesday

I love a good, crispy meatball! These definitely do not disappoint…

Thursday

To round out our Asian themed week, I wanted to try this meal. I assume the flavors will be similar to our other teriyaki, hoisin sauced meals, so hopefully we aren’t too sick of them by Thursday, Maybe to change it up, I will serve this over noodles instead of rice.

Weekly Meal Plan September 7-11

It’s the last day of summer vacation…I can’t believe it! Where did the summer go?

Summer memories

It always feels like this as school starts. You look back on the summer and reflect on all the fun and (lack of) work and projects that got done and wonder what you did with all that time.

My classroom is ready for the 26 eager (and probably some not-so-eager) students who will enter my room and spend the year with me.

Grade 3 classroom

It’s always a mix of excitement and nervousness as the big day approaches.

I’ll get up early tomorrow morning and put on my best I’m-the-teacher outfit, grab my lunch and go in to make sure every last part of the day is organized, photocopied and ready to be executed.

Work Melissa is back in the house….sorry Andrew. Summertime Melissa did have a little chat with her before she left. She said to not take things too seriously, to relax a bit and to still have some fun.

Hopefully she took that message to heart.

One thing I know helps with the craziness of the week is a meal plan. I’m back on track after a summer of lackadaisical meal planning. And for this first week I have planned all slow cooker recipes so that I can just come home to a finished meal.

Tuesday

First day back! This recipe is an easy take on Chinese food…just throw everything in the slow cooker and make a little rice and stir fry veggies before serving!

Honey Sesame Chicken

Wednesday

I’m putting my slow cooker through the paces this week! I’m planning on making EXTRA rice on Tuesday so that I don’t have to do it Wednesday.

Chicken Lettuce Wraps

Thursday

Again, another tried, true favorite. I could make this chili in my sleep…
