Weekly Meal Plan June 30-July 4

Well I made it… Summertime Melissa is back!

The school year finished off in fine form. We had a Grade 3 Variety show which was highly entertaining. There were dancers, singers, musicians, joke tellers and even one boy who lifted a large chair as a feat of strength. Needless to say it was highly amusing.

As the last day wrapped up and most of the kids were out of the hall I looked over to one little boy who was standing at his locker fumbling with his backpack. As I got closer to him and realized he was crying.

I asked him what was wrong.

“I’m crying” he responded through sniffles.

“Yes I know, but why?” I asked

“Because I am just going to miss you so much.” He said and broke down into sobs.

I gave him a big hug and sent him on his way for the summer with promises to come back and visit. It tugs at the heartstrings when things like that happen…but I know it means he had a good year, even though I did yell at him on a daily basis to stop staring out the window,  to stop dropping his water bottle on the floor, or “No, you cannot go to the bathroom until you finish another row of your math facts!”

On Friday I packed up my teaching life in two car loads and moved from the comfort and security of one school to a whole new world of opportunity at a new school. It was terrifying, overwhelming and exciting all at the same time. I look forward to what the fall has in store.

But that is a looonnngggg way off. Summertime Melissa is around for a while and we are going to have some fun! I have lots of plans for projects and cooking that I can’t wait to start and share with you.

This week the meal plan is a loose plan. With the start of summer and Canada Day in there it’s hard to know when we will be home for supper and when we won’t. So I’ve got some meals planned, and if we don’t get to them, they will find themselves on the plan for next week.

I tried to choose a recipe that, if I didn’t get to it this week, the ingredients would still be good for next week. The meatballs that I made from this site last time were delicious, so I am assuming that these balsamic glazed ones will be equally as good.

You all know how I feel about Chinese food…here is another recipe to add to my repertoire. I think one of these days I want to make a BIG Chinese meal…soup, spring rolls, the whole deal. Now that summer is here that might just happen.

Sweet Potato, Black Bean, Honey-Lime Tacos

Spring is here and I love it! (well it is currently here…who knows for how long? We could still get more snow…it’s not safe till June!)

Spring means it’s time to get the bike out and start riding again. And that is just what Andrew and I did today. We planned ahead, packed up and rode to work. I’ll tell you that it feels LESS spring-like in the mornings. I had to wear my winter mitts…

But it felt so good to get out and ride. I look forward to many more days like today.

Now it’s time to make supper.


Tonight is our token vegetarian meal of the week, and it looks absolutely incredible.

I started by cubing up my sweet potato, tossed it in olive oil and spices and roasted it in the oven at 425  degrees for 20 minutes. Halfway through the cooking time, I gave it a toss and turn.


While that was cooking, I chopped up an onion and sauteed it in a little olive oil until it was caramelized and soft.


Then I added in the garlic,  black beans, peas (thought I had corn in the freezer…I was wrong), honey and lime juice. I cooked it just so it was warmed through.


Then I threw in the cooked sweet potato and some chopped, fresh cilantro.


I wanted corn tortillas for these so I went to our local Mexican market and picked some up.


I topped the tacos with cheese and avocado.


The verdict- These were unbelievable! And the corn tortillas were the cherry on top. This is definitely something I will make again soon.
