Slow Cooker Turkey, Roasted Sweet Potatoes and Green Beans

I mentioned last week that, in grade 3, we were lucky enough to get student teachers starting with us for 4 weeks.

Student teachers are so great because they have the best “out of the box” lessons. They are new enough to try the things that us veteran teachers wouldn’t touch with a 10 foot pole. It’s fun, exciting and the kids absolutely love it.

It’s also a ringing gong…but boy it makes for some great stories.

Our student teachers are right in the middle of the “Animal Life Cycles” unit and have planned some amazing lessons. Today they created stations to teach the characteristics of amphibians.

One of the stations was a representation of frog eggs. Our ingenious student teachers brought in tapioca balls (you know the stuff you get in bubble tea?) to represent this.

 

Of course the big question was “Are those REAL frog eggs?”

Angie’s student teacher eluded this question for the whole lesson…building allure and excitement behind the station.

Then it happened…

One of the kids got splashed in the eye with the “frog egg” water.

He cried and cried.  He was really worried that one of the eggs may have gotten in his eye and…what if it hatched?

Angie’s student teacher, thinking quickly on his feet, went over to the cup and looked in for a moment. He looked up and said to the boy

“Don’t worry, I counted and all the eggs are here, so you don’t have one in your eye…nothing to worry about”

Needless to say, we all had a good laugh about that after school.

If you are a regular reader of this blog, tonight’s supper should remind you of supper last week. Basically I just substituted turkey for pork tenderloin and sweet potatoes for potatoes.

I put my bone in, skin on turkey breast in my slow cooker, mixed up my marinade and poured it over top.

I cooked it today on low for 8 hours.

About an hour before my turkey was done, I cut up a sweet potato, doused it in olive oil and rosemary salt (mmmmmm!) and popped it in a 400 degree oven for 40 minutes.

In the last few minutes, I microwaved my green beans, tossed them with some of the marinade and a little Parmesan cheese. I also pulled the turkey out and sliced it up.

The verdict- tasted just as good as last week! The turkey was a bit on the dry side (not sure how to stop that from happening…) but the flavor was delicious.

I’m not sure if there is enough turkey leftover to make sandwiches…it didn’t go nearly as far as I thought it would when I bought it. Oh well! It tasted great. I guess that is all that matters.

 

Weekly Meal Plan March 24-28

Another week down! Wow…

This one seemed especially busy for a few reasons

  1. My student teachers started! I am lucky enough to have two student teachers working on their first practicum (4 weeks) and they are fabulous. It is great to have extra bodies in the room to support our large classes. I love working with student teachers because they are eager and full of great ideas. Plus, let’s be honest, it means a bit of a break for me!
  2. We hired another grade 3 teacher! We received student #70 this week for our 2 classes and that finally tipped the scales…so we were busy interviewing and meeting and getting organized for that transition on Monday.

I’m glad the weekend is here. We have some fun planned with friends and a little family time too.

But before I can relax, I need to get all my work done.

“Put First Things First”, like I always tell my students…

And part of that is my meal plan. Luckily planning what we will eat next week does not really feel like work to me.

I thought this recipe looked delicious. Plus, I love anything from P.F.Chang’s. Since I can’t easily get to one (there are none where we live), a copycat recipe will just have to do!

This soup looks hearty and delicious…plus it is a slow cooker recipe so it should (in theory) save some time right?

I’m thinking the sauce I made for the pork tenderloin last week would taste GREAT on turkey as well. To go along with that, I am going to make some sweet potatoes and more green beans…because that sauce is SO GOOD on green beans…

Thursday

There should be lots of turkey left over, so I am going to make some great sandwiches and either use up the black bean soup, or I’ll pull out some borscht from the freezer.
