Happy Family Day weekend! I hope that, if you get this holiday, you are using it to spend time with and reconnect to your family. I love long weekends…who doesn’t like extra time to rest and relax? It’s also one more day to put off the school work that sits in my bag…
Here is what I have planned for this week.
|Who knows? It’s a holiday! We will cross that bridge when we get there||Crockpot Thai Chicken and rice||Baked potato soup||Thai Turkey Meatloaf, Rice and Stir Fry Veggies||Potluck at a friend’s house. I’m making meatballs!|
- 4 chicken breasts or the equivalent in chicken thighs if you prefer
- 1 red pepper
- 1 onion
- creamy peanut butter
- vegetable broth
- soy sauce
- green onions
- crushed peanuts
- 2 russet potatoes
- 1 head of cauliflower
- chicken broth
- sour cream
- cheddar cheese
- 2 lbs ground turkey
- soy sauce
- toasted sesame oil
- brown sugar
- rice vinegar
- stir fry veggies x 2
I guess you might say that I am on a bit of a Thai flavor kick this week…I don’t usually do that, but these recipes just looked too good to pass up! I think I will serve mine with some stir fry veggies just to round out the meal.
Skinnytaste is a GREAT blog for healthy and super delicious recipes. I haven’t tried one in a while, but this one as been tempting me the last few weeks…so why not give it a try right?
Budget Bytes is another one of my favorite food blogs (thanks Colin for introducing me!) This looks so yummy and I cannot wait to try it! Again, I am going to add some stir fry veggies on the side to round out the meal.
