I can’t believe another year is drawing to a close.

It is true what they say: As you get older, the years seem to go faster.

Chicken, Brie and Fig Jam Sandwiches

Some of our closest friends, Viv and Mike, have three great boys.  We spend lots of time with their family and have lots of wonderful memories with them.

These boys are Lego boys…they have sets upon sets and usually when we go over they are busy putting together something.

But last weekend, when we went over, was the first time I had seen a Lego set up of that magnitude.

There was Lego EVERYWHERE…and I mean everywhere. It was even hanging from the ceiling by string and tape.


The boys had set up different scenes with their Lego and it was neat to see how their personalities shined through. Will’s was methodical and organized, Joseph’s was story based with lots of funny quirks built in.


You had to be very cognizant of where you stepped and could only access the couch from behind, but it was totally worth it to see how proud and excited they were about their creations.

This week has been absolutely nuts! On Monday I was so focused on getting dinner on the table so we could promptly leave again, that I totally forgot to document my coconut curry chick peas. They were absolutely delicious, just so you know. If you are a curry fan and looking for a great, cheap vegetarian option, you should totally check it out.

I am very excited about tonight’s dinner. The chicken, brie and fig jam sandwich is one of Andrew’s favourites from Earl’s so it is about time that we figure out how to make our own.

The first step was finding the jam.

Thank you Superstore for carrying a wide variety of products so I only have to go one place for my groceries!

I bought some brie cheese, some bread and pears. After checking the Earl’s menu I realized that it is apples on the sandwich, not pears. But I’m going to think outside the box and give it a try with pears (also, I have no apples).

I started by cooking my chicken breasts in a 375 degree oven for 30 minutes. I seasoned my chicken with rosemary salt and some pepper.

I also cut up my pears and popped them in the oven for 15 minutes to warm through and soften.

While the chicken was cooking, I thought I should taste test the fig jam.

Then I thought I should see how it pairs with the brie.

I am happy to report it is a great combination!

To assemble the sandwich I put the brie on one side and the fig jam on the other.

I layered the chicken and pears on the brie and threw it in the panini press to get that brie good and gooey.

The verdict- Oh my goodness this was incredibly good. The pear was a nice accompaniment to the brie and the jam. Apple would be good too…but I think I might like the pear combination better. Just be ware, this is a messy, gooey sandwich. But believe me it is well worth the extra napkins.
