Weekly Meal Plan March 2-6

This past Thursday and Friday was Teachers Convention. I love Teachers Convention…not necessarily because I learn a whole bunch but because it is refreshing.

My first few years of teaching, I would scour the convention sessions for ones that would help me teach the various subjects that I thought I was ill-equipped to teach, go and sit through each one and leave teachers convention feeling like I was the worst teacher in the world. I wasn’t doing enough (obviously) and I certainly was not doing it right (thanks, sessions for pointing that out to me)

I would spend the weekend feeling terrible about how I was doing and worry about the week ahead.

Finally I got smart.

I realized that Teachers Convention is about recharging. Its a time to see old friends and catch up (I am lucky to get to spend Teachers Convention with those people that I like the most, but don’t get to see enough). And of course, see some sessions that affirm what you are doing, sympathize with the challenges you face and generally make you laugh.

That is what Teachers Convention is all about.

And this year fulfilled all those things.

I learned how to be awesome at work.

I was reminded that I am doing a pretty ok job teaching writing in my classroom.

And I laughed and laughed and laughed.

Now on to the weekend and all the great things that I get to do…isn’t that awesome? (see what I did there?)

Here is what we are eating this week. I got a little chicken-crazy and didn’t really realize it until I was in the grocery store buying 3 days worth of chicken. I usually like to mix things up a bit but really dropped the ball on that this week. Please forgive me. Maybe we will go chicken free next week…but probably not.

Weekly Meal Plan November 3-7

I stopped to treat myself to a coffee this week and saw this:

Before I met Andrew, I would not have understood this sign. But now…8 year later…I giggled a bit and thought it was so great I had to have a picture of it.

I found a few new meals to try this week which I am excited about. I am equally excited about some old favorites that I was reminded of.

Monday

I haven’t made pizza rolls in a while so I thought I would dust off this recipe and make them again. I bought salami, green peppers and mushrooms to put in ours, but you can add anything you like to yours.

My friend Lara made told me she was making black bean soup last weekend and I remembered how incredibly good this soup was! So naturally it had to put it on the meal plan this week.

Another slow cooker meal! I love coconut….so I am sure you can understand why I chose this.

Thursday

I found this recipe while on Pinterest (one of my many hobbies) and I instantly wanted to make it. These sticky chicken fingers look dangerously good…
