Slow Cooker Chicken Lettuce Wraps

So I started this recipe last night, but it is not really a recipe that needs to be started the night before…at least not if you get home around 4pm!

Nevertheless I got it ready last night.

Step one is to microwave your ground chicken on medium power for about 5 minutes.

WARNING- this smells very, very bad…and its just kind of yucky. I didn’t even take a picture of it because there was nothing appetizing about this step whatsoever.

Once the meat is cooked, drain off any liquid (eeewwww) and put it in the slow cooker.

Add chopped red pepper, onion, minced garlic, hoisin sauce, soy sauce, ground ginger and salt and pepper.

Mix everything together and cook on low for 1.5-2 hours.

Near the end of the cooking time, stir in the water chestnuts, rice and scallions. Let it heat through and serve in lettuce leaves.

The verdict- These are AMAZING! Messy, but amazing. If you have ever been to P.F. Chang’s, these are just like their lettuce wraps.

Next time I will brown my ground chicken in a pan before putting it into the slow cooker. The microwave is just not the right tool for cooking ground meat. Plus I think it would be easier to break up the chicken as it cooks so you maintain that ground texture.

Definitely making this again. I think my mom would absolutely love these!
