Greek Meatball Bowls

It can be tough to get kids to be really self reflective.

But I try…every day I try to get kids to think about they way they are talking, acting and treating others. And I work hard to show them that their actions have consequences…for themselves but also for those around them.

During one Health lesson we were talking about what it means to be a good friend and ways we can be a better friend. I challenged each child to set a goal regarding friendship and write about it in their journals.

Some kids were brutally honest.

This is quite possibly one of the best new meals I have made in a while. It has a few different parts that make up this incredible dinner bowl, but don’t be deterred….it is unbelievable and totally work the time and few extra dishes.

I started by making the meatballs for this dish.

In a bowl I mixed

  • 1 package of ground beef
  • 1 egg
  • 1/4 cup bread crumbs
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon minced garlic
  • 1/2 teaspoon cumin
  • salt and pepper

I formed the mixture into meatballs and placed them on a greased tin foil lined baking tray (makes for a much quicker clean up at the end…trust me) and baked them at 425 degrees for 15 minutes. I flipped the meatballs and baked them for another 15 minutes until they were nice and crispy.

Next I worked on the tomato cucumber salad.

In a bowl I mixed

  • 1 cup chopped tomatoes
  • 1 cup chopped cucumber
  • 1/4 cup diced red onion
  • 1 tablespoon chopped parsley
  • salt and pepper

I gave it a good stir and just let it hang out while the meatballs cooked.

The last component to this meal is the couscous.

I cooked mine according to the package directions but added in some lemon juice and more fresh parsley.

When I was ready to serve this I put a huge dollop of tzatziki over top. The original recipe calls for homemade stuff, but I am just as happy with the stuff I can find at the grocery store.

The Verdict- If there was a drooling smiley face emoji, I would put it in here. I cannot say enough good things about this dish…I dream of this meal. I seriously could not wait until lunch today to eat this again. You must make this….and then tell me how much you loved it too.
