I got an email at work from Andrew this week.
All it said was “Can you make those granola bars you used to make? I like those granola bars…”
I used to make homemade granola bars all the time. I got the original recipe from a family who gave me homemade granola bars (and the recipe) for Christmas one year.
Now please note- I don’t think these are very healthy granola bars…but boy do they taste good. I plan on sending them to work with Andrew this week so I don’t end up eating them all. I bet there is a way to make them more healthy and subsequently a little less delicious, but I figure I should just give Andrew this…we eat pretty healthy the rest of the time and I make him eat a lot of things he would not choose to (read-lentils).
These are super easy and can be customized any way you want.
Here is what I used-
- 3 cups quick cooking oats
- a whack of ground flax
- a bunch of coconut
- some dried cranberries
- chocolate chips
- a breakfast granola mix I had in my pantry
- 1 can of sweetened condensed milk
- 1/2 cup melted margarine.
If I would have had oat bran, wheat germ and all that good stuff I would have thrown that in too…but I didn’t. (Can you hear Andrew cheering?)
All I do is get my dry ingredients into a bowl.
Pour in the sweetened condensed milk and the melted butter.
Press into a well greased 9×13 pan and bake at 350 degrees for 20 minutes.
Let them cool before you cut into them or they will completely fall apart.
