Crockpot Beef and Broccoli

I love Chinese food but we don’t get it all the often anymore for 3 reasons.

  1. I’m pretty sure it is very bad for you
  2. I eat WAAAYYYY too much of it
  3. I usually feel very sick after I am done (this could be due solely to #2)

But I figure if I make it at home, maybe it won’t be AS bad for you…unfortunately I am probably still going to suffer from #2 and #3…

This was so simple to put together.

Last night, in my crockpot, I mixed together garlic, beef broth, soy sauce, brown sugar and sesame oil.

Then I added in the beef.

This morning I set it to low and cooked it for 5 hours.

With 30 minutes left in the cooking time, I whisked together some cornstarch and sauce and added it in.

I also cut up a whole bunch of fresh broccoli and added that in too.

I let that cook away for the rest of the time (30 minutes)

While that was cooking, I made rice too.

The verdict- Well I was underwhelmed with this. I think maybe I didn’t add enough cornstarch because the sauce really didn’t thicken up at all…

If I make this again (and I am not sure I would…), more cornstarch is necessary.

I would also try to make this more like shredded beef and broccoli (cook it longer and then shred it with forks). That might help make it a little more tasty too because the sauce could coat each piece more.

  1. Ha! So funny – my sauce didn’t thicken either, so I quickly drained it and re-heated the sauce in a pot with extra cornstarch, and then poured it over again and it was a great consistency! We both liked it a lot! There IS something about msg-laden-genuine-Chinese that is hard to duplicate perfectly at home, though, I suppose:) Some things you just have to indulge in from time to time:) But I definitely liked it, and it was perfect since I had a bunch of broccoli that needed to be eaten up:)
