Cranberry Orange Chicken Salad Sandwiches

An appointment after school getting me home late + Andrew out for supper = Lazy supper

I just didn’t want to really start cooking when I got home today.

So instead of making sandwiches and soup later in the week, I took the soup out of the freezer for lunch tomorrow and made myself a delicious sandwich.

Now let me expand your horizons (unless you have already stumbled across this little gem)

Canned chicken breast


Please, trust me…this is delicious! My mother-in-law got me hooked on this when she gave me a can she bought from Costco to try (Costco cans are BIGGER, which means more sandwiches out of one can…which means more delicious sandwiches…)

From that point on, I fell in love with this product. It’s just like a can of tuna….but low calorie, high protein chicken breast.

Tonight, I felt like cranberry orange would be a good combination to slather on top of the rest of that focaccia bread from last night.

I started with one can of chicken breast and mixed in a dollop of mayo, chopped green onion, dried cranberries, orange zest and a little orange juice. You could even mix in some almonds if you like.


Once it’s mixed together, season with salt and pepper.

Serve on your favorite bread (I like mine toasted) or you could even eat this in lettuce leaves if you don’t want the carbs (but who in their right mind doesn’t want the carbs…)


The verdict- For a quick meal, this is perfect. I got home and within 10 minutes I had dinner ready and could sit down and relax. That is the kind of meal I like when I walk in the door late.

And if you are skeptical about the canned chicken breast…trust me it is delicious. Have I ever led you astray?
