I hate throwing out food…

I’m not a big fan of others doing it either.

My mom is a premature thrower…at least that’s how I feel. She thinks I scrape the mold off things and eat stuff that is WAY past its prime.

I guess different viewpoints make the world go round right?

We were at my parents place last night and my mom was cleaning out her fridge after her grocery shop.

She was just about to throw out this gem

I wasn’t sure what I was going to do with it, but I was sure that it should not end up in the garbage! You can make something good with that slightly stale bread…

I’ve never made bread pudding before, but I figure it can’t be that hard and it would use up the bread, plus empty out the Nutella jar that is in the pantry.

I started by cubing up the half loaf I took from my parents.

In a bowl I whisked together

  • 2 cups milk
  • 2 eggs
  • 1/2 cup Nutella (I just eyeballed it…too much Nutella is never a bad thing)
  • 2 tbsp cocoa powder
  • 1 tsp (or a large splash) of vanilla

I folded in the bread cubes and let it sit 5 minutes to allow the bread to soak up some of the liquid.

I poured it in a greased glass baking dish and baked it at 375 degrees for 25 minutes.

The verdict- Yum! The pudding is gooey and chocolatey…what a great way to use up bread that is past its prime. This would be even better if the bread has been plain white or whole wheat. I may also let it set up a little more before I dig in next time. It was a bit runny at first. As it cooled down more it firmed up.
