Day 2 of 23 students…it’s pretty awesome. I mean we always work at light speed so things feel crazy but it doesn’t feel quite SO crazy…
Less kids in a room allows for a little more fun too. So today we got to do something I haven’t really been able to do this year, but that brings me great joy.

I begin the music and the kids start moving in their seats. They know their row will not be chosen if they aren’t “feeling the groove”.
Row by row they get to shine and show their moves as they make their way to the door.
And oh man, do they have moves!
Just thinking about it makes me smile.
It was nice to come home tonight to dinner already bubbling away. And don’t worry, I already told Andrew to prepare himself…vegetarian (strike one) and beans (strike two). But just think of how happy we are going to be after all that fiber! He doesn’t feel the same way about fiber as I do…
This was super simple to put together and I think it is going to have a chili-esque flavor to it.
Last night I started by grating 2 carrots, chopping up a red pepper and a handful of spinach.
I threw the veggies in the slow cooker with the garlic, beans, diced tomatoes, refried beans, paprika, hot sauce and water.
Today I plugged in my slow cooker, turned it on low and let this cook away for 8 hours.
Right before I was ready to serve it, I used my immersion blender and gave it a quick whiz up.
I served this with some cilantro, cheese, salsa and sour cream on top.
The verdict- Oooh…this was delicious! It feels like it’s been a while since I’ve made something for supper that I have enjoyed this much. This is a totally winner! And it seems even better because I know it is so healthy. It really did have a chili like flavor, which I love too. Even Andrew liked this, so it must have been good because we all know how he feels about vegetarian dishes…
